You’ve already done a lot of playthroughs across small-into-empire and Mediterranean/Ottoman-era goals, so pushing a small Byzantine successor (Trebizond → Komnenoi Empire), a coastal French start that expands into crusader/Jerusalem play (Provence → Jerusalem), and a mercantile Diplomatic/league challenge (Ragusa leading a trade league and keeping the Ottomans independent) all build on your existing regional, vassal and trade experience and are achievable next steps.
